What is the difference between natural steeping and a bain-marie?

Natural steeping relies on time and patience, while a water bath is a thermal method used to artificially accelerate maturation. Natural aging allows molecules to settle slowly at room temperature, ensuring maximum stability and faithful reproduction of the most delicate flavors without any chemical stress.

By slightly heating the mixture, a water bath thins the vegetable glycerin to help flavors disperse, but it carries the risk of degrading nicotine or destroying volatile top notes if the water is too hot.
